Vegetarian Meatballs

Vegetarian Meatballs

Add to blender:

- 55g sun-dried tomatoes

- 2 garlic cloves

- 1 red chilli

Blend

Add to blender:

- 250g chickpeas

- 10g coriander

- ½ tsp chilli powder

- A sprinkle of salt

- 40g vegetarian parmesan

Blend

Add to blender:

- 2 eggs

Blend

- Combine 30g panko breadcrumbs and 1tsp chilli powder

- Roll the chickpea mixture in to small balls and coat in breadcrumbs

- Heat a steel pan with 20ml of rapeseed oil

- Fry the balls for 5 minutes. Make sure to turn them regularly

- Place them in an oven for 10minutes at 180C

- Remove from oven and place on kitchen paper to drain excess oil

For the dipping sauce......

Finely chop:

- 10g of jalapenos

- 5g of capers

- 5g or parsley

- Add 2tbsp of hummus and a squeeze of lime juice

- Mix well

- Serve with the Vegetarian meatballs

- Enjoy! :)
